The Spirit of Amabuki With a 300-year history starting from the Genroku period, Amabuki Shuzo uses sake-brewing rice wholeheartedly produced in the fertile Saga Plain and mild river-bed water from the Sefuri Mountains.
In addition to these ingredients, making good use of excellent climate for sake brewing, flower yeast which is a gift from flowers, and other blessings by nature, Amabuki Shuzo brings together rich flavor of flower yeast and delicious taste of rice itself using malt in its unique brewing method and provides its customers with good and safe products.
The brewers, who have inherited skills accumulated during a long history, are attracted to the force of nature and earnestly making an effort to create good sake.

Flower Yeasts and Amabuki Yeast is essential in sake brewing. Although yeast is the general name for the microorganism that serves a vital role in producing alcoholic fermentation, the type of yeast typically used in sake brewing is sake yeast, which is cultured from a strain extracted from sake mash.
However, at Amabuki, we use flower yeast, a type of yeast that has been extracted from flowers.
